Deep-Fried Goodness

So, last week we got a deep-fryer. Let me tell you, that is the best decision that we've ever made.

Ever since we got it, we haven't gone a day without deep-frying something or another.

Our favorite are beer-battered onion rings from Save-A-Lot. I don't know why, but these are super tasty.

I've never been much of a cook. I mean, I can cook and when I do, I make some really tasty meals, however, I'm lazy and I hate to cook. So anything easy is great for me.

Deep-frying is very easy. So far we've done fish, chicken, fries, onion rings and chimichangas. Next, we'll be trying deep-fried oreos and possibly pickles. I can't wait.

Children and Grandparents

I never had grandparents in my youth. Apparently, both sets passed away when my parents were young. I always wondered what it was like to have a grandmother or a grandfather to do things with.

My children have a full set of grandparents on their daddy's side and a grandmother on my side. Unfortunately, since neither of talks to our mothers much, they might as well be non-existent. I don't understand how any of them can care so little about having grandchildren that they never see or talk to.

On the rare occasion that Hottie Hubby talks to his parents, they never ask to speak to the kids. They don't ever ask to come visit or ask for the kids to go there to visit them.

Mostly his mother just calls to bitch at her son for not calling enough and to express her disappointment that he ended up with me. See, this lady is independently well-off and always wanted him to end up with a snooty rich-bitch. Much to her chagrin, he ended up with a "rough around the edges" girl from the wrong side of the tracks.

I've always been one to set my issues aside for the kids. I've never talked negatively about any of our family in front of them. As tough as I know it will be if it ever happens, I've told Hottie Hubby that I will bite my tongue around his mother if the situation ever calls for her to be around us. Hmmm...at this rate, I don't see that happening unless there's a death in the family. Hopefully, it won't be at her own.

Mothers and Nursing

After I found out I was pregnant, I decided to continue school and show everyone that I wasn't going to let a teen pregnancy affect my education goals. Well, I ended up choosing not to go to the Public High School and selected the local Teenage Parenting Program at an offsite locale. We had five classrooms to go to there and we got a whole lot of individual attention.

Going to this "school" was the best decision I had ever made so far. We were given a syllabus and told that we could work as fast or as slow as we wanted to. Well, knowing that I had a baby on the way within a few months, I decided to hurry through the second semester of tenth grade (which I had terribly failed due to my sexcapades to the beach everyday) and got through the first semester of eleventh grade before my daughter was born in February.

Seeing that I was working so fast through High School, our counselor thought she better get together with me and start discussing my future. We discussed my likes and dislikes and I told her that I really wanted to do something in the medical field. I had always wanted to be some sort of doctor, but with having a baby, I decided to settle for becoming a Registered Nurse and go for a Master's in that. Since I am fluently bi-lingual, I saw great opportunities for myself. The counselor and I started researching nursing programs and found one at a school that was seven hours away.

We discussed housing and sitting while I went to school. Being a minority, and a single parent, she was able to find grants that would pay for school, day-care, rent, books, transportation and anything else I would need for the entire time it would take me to graduate. I was excited!!! Things were finally looking up for me and my teen-pregnancy had turned into just a blip that would end up positively.....or so I thought.

Little did I know that when my counselor had a meeting with my mom, my mother would not let me sign up for a school "so far away". I was a brand new mother. I'd kill the baby. I didn't know the first thing about caring for myself let alone a child far from her ever-controlling eye.

Unfortunately, I had just turned seventeen and needed my parents permission to be able to go away to college. So, there went my Nursing School dreams and here I sit working in an office sixteen years, a husband and two additional kids later. I think this was her way of making me pay for not being able to kick me out of the house when she found out I was pregnant. Hopefully someday, I will be able to fulfill my dream of becoming a Registered Nurse with a Masters. One can only dream...

Getting to know me.....

Hello all,

This is my very first post and I'm so excited to get started and hopefully get all sorts of fans...errr followers. ;-}

First off, lemme tell you about me:

I'm 33 and in a long-term (13 years) relationship with a hot man (The HottieHubby) that I call my husband and have kids with, only we're not really married due to the fact that this stupid state we live in doesn't recognize "Common-law" marriage. (I know...sounds kinda "hillbilly" but the reasons we can't get married are complicated and better left to a different post.)


Anyway, we each have one daughter from previous relationships that don't live with us (more complicated BS) and together we have two beautiful children (a girl - Princess; and a boy - Superhero).


HottieHubby and I have always known we were soul-mates from day one. We were both born and raised in South Texas...very south. And, we are both adopted.



THE HOTTIE HUBBY
From the moment I saw him, I knew I wanted to be with that guy (at least for the night) and as luck would have it, even after each saying we didn't want a relationship at the time, we ended up spending every night together after that until we decided to move away (far away) together two months later.
See, back then I was living with my best friend at the age of twenty and I was partying every night of the week and I had three f-buddies and a boyfriend in jail (don't ask---I'm not sure I'll ever be ready to explain him). Well after a night of much needed catch-up sleep, I rode to a bar with my friend (she was just checking if her jerk boyfriend was there after another of their usual fights). I was waiting in the car with my daughter while she quickly checked the bar for him. On her way into the bar, she ran into some guys that she had met at a party the night before (while I was sleeping). One of them was a tall and bigger guy, and the other one (HottieHubby) was 5'8", well-toned (not too muscular, just enough to make you drool), perfectly tanned, sharply dressed and with the most perfect facial features (dark eyebrows, chiseled jawline, a perfect nose and very kissable lips). She gave each of them a quick hug and went inside the bar. As soon as she got back to the car I immediately asked her who that guy she had hugged before she went in was. Of course...SHE DIDN'T REMEMBER WHO SHE HUGGED!!! (Ughhh) Later that night, we returned to that same bar and her friend Norma (the bartender) met us at the door. As soon as she met me, she told me she liked me for her brother and I should come inside to meet him. Well wouldn't you know....it was the Hottie from earlier!!! I was ecstatic and the rest is history.
Well we ended up moving to Missouri first and then had a wild hair that told us to follow some friends and move to Wisconsin....what the hell were we thinking!?!?! We are a VERY long way from home.
OUR CHILDREN
We have two beautiful children that are pretty well-behaved considering that both their parents had pretty wild beginnings (we got so lucky). Our daughter is eleven and our son is nine. They are each unique in their own ways.
Princess is very smart and sociable (this she gets from me) but unfortunately, can be very cold and vindictive (this is from her daddy).
Superhero is a very loving kid with a big heart (Me again) that hates school and would rather play sports and play videogames than do anything that requires too much thinking (daddy).
OUR EVIL MOTHERS
HottieHubby's mother is a independently wealthy, proper woman with a sharp-tongue that can seriously cut a bitch. All these qualities are fine and dandy right....WRONG!!! Since the day she met me, she decided that I was all wrong for her son and didn't waste any time in letting me know it with some harsh [but "proper" (Have you ever had anyone tell you off pleasantly and politely? Just like that!)] jabs and by trying to change everything about me from the way I dressed and looked to the way I ironed his jeans. (Huh???)
My mother is a housewife that always resented me for being Daddy's girl and never let me live down any mistakes I encountered through life.
-For this I must say that I was a pretty smart and good kid that hardly ever got into trouble and loved school until I reached tenth grade. In the second semester of tenth grade, I met the wrong guy and started skipping school everyday to go to the beach (I LOVE the beach!) and ended up pregnant at sixteen. Well when she found out, she kicked me out of the house until my Daddy packed his bags and was ready to come with me (I paid for this too) I continued school and graduated with my class so it really didn't affect my love of school and wanting to graduate high school.
Well that's the story of my life so far, I think, I hope I didn't leave anything important out.
